This simple, delicious and nutritious dinner is a great addition to the weeknight recipe arsenal as it only takes about 30 minutes to make. Adapted from All Recipes.
Sheet Pan Salmon with Bell Peppers & Garlic Infused Honey
2 TBSP olive oil
4 salmon fillets, with skin on
3 bell peppers, yellow, orange or red or a mixture, cut into chunks
1 red onion, sliced
Juice of 1 lemon
3 TBSP olive oil
1 tsp salt
1 tsp ground cumin
1 1/2 tsp red pepper flakes
Big handful of fresh parsley, chopped
1 lemon, sliced for serving (optional)
Greese sheet pan with 2 TBSP olive oil and pre-heat oven to 400C.
Place salmon, skin side down, bell peppers and onions on sheet pan.
Whisk together lemon juice, olive oil, Bee Kind Garlic Infused Honey salt and cumin. Stir in red pepper flakes & parsley. Drizzle 2/3 of the sauce over salmon, peppers & onion.
Bake in oven until salmon is cooked to your liking, about 10 minutes.
Serve with remaining sauce drizzled over the top and lemon wedges on the side.
