This is a super tasty and easy weeknight treat, but the pecans make it special enough to serve to guests too. Lucky guests! We adapted this recipe from Recipe Tin Eats, who we thank for the inspiration!
Caramel Pecan Baked Apples
Serves 4
Ingredients
4 apples
3/4 cup water
2 TBSP cornstarch
Filling
4 TBSP brown sugar
1 tsp cinnamon
1 cup chopped pecans
4 TBSP butter, melted
generous pinch of salt
Instructions
Pre-heat oven to 350F degrees.
Mix together filling ingredients and put aside until it solidifies a bit.
Cut the apples in half through the core and scoop out the cores with a spoon or an ice cream scoop.
Put apples in baking dish cut side up, ensuring a close fit so they won't tip over and spoon filling over the top.
Mix water into cornstarch a bit at a time to keep it smooth and pour into the bottom of the baking dish around the apples.
Cover apples with aluminium foil and bake for 20 minutes. Remove cover and bake another 20 minutes or until topping is nicely browned and apples are soft, but still holding their shape. The sauce will be syrupy in the baking dish and continue to firm up a bit while serving.
Serve in a bowl with ice cream and spoon sauce over top. Enjoy!
