Cherry Goat Cheese Salad with Honey Lemon Dressing

When cherry season hits, you have to make the most of these sweet treasures and this salad is such a refreshing way to use them. Try this as a side dish alongside barbecued chicken or something tangy or make it a meal in itself. We've borrowed this recipe from Kalefornia Kravings and made a teensy tweak or two and whisked in our Bee Kind Garlic Infused Honey to add another layer of flavour.

Cherry Goat Cheese Salad with Honey Lemon Dressing


1 bunch of kale, leaves cut off the rib & finely chopped

1½ cups cherries, pitted & halved

½ cup goat cheese, crumbled

¾ cup pecans, toasted

2 1/2 lemons, juiced

2 tsp extra virgin olive oil

Freshly ground pepper, to taste


Instructions

  1. Place chopped kale in a bowl and drizzle it with juice from 1/2 of a lemon and a drizzle of extra virgin olive oil. Massage into the kale to coat fully. Set aside.

  2. In a separate bowl, whisk together juice from 2 lemons, Bee Kind Garlic Infused Honey, extra virgin olive oil and pepper.

  3. Add the cherries and goat cheese to the kale. Pour the vinaigrette over the top and toss together. Sprinkle with toasted pecans just before serving.
