Spinach & Apple Salad with Garlic Infused Honey Vinaigrette

Salad Ingredients:
- 10 ounces baby spinach
- 2 large Gala or Ambrosia apples, cored and thinly-sliced (or any apple if you don't have these on hand)
- half a small red onion, peeled and thinly-sliced
- 1 cup walnut halves, toasted
- 1/2 cup dried cranberries
- 5 ounces feta cheese, crumbled
Garlic Infused Honey Vinaigrette:
- 1/3 cup extra virgin olive oil
- 1/4 cup apple cider vinegar
- Squeeze of fresh lemon juice
- 1 tablespoon Dijon mustard
- 1 tablespoon Bee Kind Garlic Infused Honey or to taste
- salt and pepper to taste
Instructions
Toss together all salad ingredients but keep half of the feta cheese aside. Whisk together vinaigrette ingredients and pour over salad. Toss until coated. Sprinkle remaining feta cheese on the top. Enjoy!
