Sesame Honey Noodles

This delicious and quick noodle dish is so versatile. Serve it as a side dish with an Asian entree or make it a meal with a few additional ingredients.  Add leftover chicken or steamed broccoli or both (our fave!).  Toss in some red bell pepper, shredded carrot or chopped green onion to keep it vegetarian.  We made a slight adaptation to this recipe from Two Peas and their Pod. Enjoy!

Serves 4

Ingredients

  • 10 ounces noodles (soba noodles, udon noodles, spaghetti, etc.)
  • 3 TBSP toasted sesame oil
  • 1/4 cup tamari or lite soy sauce
  • 1/4 cup seasoned rice vinegar
  • 3 TBSP peanut butter
  • 2 TBSP Bee Kind Garlic Infused Honey 
  • 1 TBSP minced fresh ginger
  • 2 TSP sriracha or to taste
  • Toppings: chopped roasted peanuts, thinly sliced green onion, sesame seeds

Instructions

  1. Bring a large pot of salted water to a boil over high heat. Add the noodles and cook according to the package directions. Drain and rinse with cold water. Transfer noodles to a large bowl.
  2. Meanwhile, in a blender or food processor, combine the sesame oil, tamari, vinegar, peanut butter, Bee Kind Garlic Infused Honey, ginger, and sriracha. Blend until smooth. Add more sriracha, to taste, if desired.
  3. Add the sauce to the pot with the noodles. Toss to coat; taste and adjust seasoning. Top each serving with peanuts,  green onion, and sesame seeds.
