Peanut Butter Brownie Snack Bites

These delicious high protein mouthfuls are an excellent make-ahead snack or breakfast bite when you are on the go! Pop a couple into a lunch bag for a sweet treat, grab a few for a breakfast on the run or for a satisfying afternoon snack. The best part is they are guilt-free! We adapted this recipe from Bake Play Smile and use our Bee Kind Vanilla Infused Honey, which adds a really nice rich and creamy flavour to the bites. We usually double the recipe because they don't last long! 

Peanut Butter Brownie Snack Bites

Makes 12-14 balls

Ingredients

12 pitted dates

1 TBSP cacao or cocoa powder

2 TBSP unsweetened natural peanut butter

1 - 2 TBSP Bee Kind Vanilla Infused Honey 

3/4 cup raw almonds

Instructions

  1. Place the dates, cacao powder, peanut butter and Bee Kind Vanilla Infused Honey into a food processor or high powered blender
  2. Blend until the mixture resembles a paste.
  3. Add the almonds and pulse until desired chunkiness is achieved.  Keep an eye on it as you blend. If over-blended it may start to liquify.
  4. If your mixture is too dry, add another tablespoon of honey and pulse to mix through. The mixture should be a little sticky and roll easily into balls.
  5. Using a spoon measure about 1 tablespoon of mixture and roll into balls.
  6. Store in an airtight container in the fridge for a week (if they last that long!).

Note

This is a great base recipe and there are some nice substitutions or additions you can try: Substitute walnuts for the almonds, add flaked coconut, sesame seeds or 1/4 cup rolled oats to your mixture for added nutrition and an extra filling snack!
