Miso Honey Glazed Carrots

There's a good chance this carrot dish will become a staple recipe in your household!  The blend of flavours with the miso paste and the sweetness of the carrots and Bee Kind Pure Wildflower Honey and the tang of lemon juice is pretty fantastic.  We have Martha Stewart to thank for this recipe, but have made a couple of tweaks.  We're pretty sure you'll thank her too.

Miso Honey Glazed Carrots

Ingredients

2 pounds  carrots, peeled and halved lengthwise

Lemon zest, plus ¼ cup fresh lemon juice (from 1 to 2 lemons)

2 tablespoons white or yellow  miso

2 tablespoons unsalted butter

1 tablespoon Bee Kind Pure Wildflower Honey

salt to taste

Instructions

  1. Combine  carrots, lemon juice, miso, butter, Bee Kind Pure Wildflower Honey, and 1 cup water in a large skillet. Bring to a boil.
  2. Reduce heat to medium, cover and simmer for about 10 to 12 minutes until carrots are crisp-tender. 
  3. Uncover, increase heat to medium-high, and continue simmering for about another 8 to 10 minutes, stirring occasionally, until carrots are at desired tenderness and liquid is reduced to a glaze and begins to caramelize the carrots. Toss with lemon zest.

Serve immediately.
