Cherry Goat Cheese Salad with Honey Lemon Dressing

When cherry season hits, you have to make the most of these sweet treasures and this salad is such a refreshing way to use them. Try this as a side dish alongside barbecued chicken or something tangy or make it a meal in itself. We've borrowed this recipe from Kalefornia Kravings and made a teensy tweak or two and whisked in our Bee Kind Pure Wildflower Honey.
Cherry Goat Cheese Salad with Honey Lemon Dressing
Ingredients
1 bunch of kale, leaves cut off the rib & finely chopped
1½ cups cherries, pitted & halved
½ cup goat cheese, crumbled
¾ cup pecans, toasted
2 1/2 lemons, juiced
3 tsp Bee Kind Pure Wildflower Honey or to taste
2 tsp extra virgin olive oil
Freshly ground pepper, to taste
Instructions
- Place chopped kale in a bowl and drizzle it with juice from 1/2 of a lemon and a drizzle of extra virgin olive oil. Massage into the kale to coat fully. Set aside.
- In a separate bowl, whisk together juice from 2 lemons, Bee Kind Pure Wildflower Honey, extra virgin olive oil and pepper.
- Add the cherries and goat cheese to the kale. Pour the vinaigrette over the top and toss together. Sprinkle with toasted pecans just before serving.
